Sweet apple crumble with a flaky crust, cinnamon and cream

This apple pie with a short pastry base and topping is found from all over the world but known mostly from the USA. Our sweet apple crumble recipe is a real classic and easy to make at home. With a sweet flaky crust, tender apples and cinnamon with a scoop of cream on top, you have a dessert that you’ll always remember.

SWEET APPLE CRUMBLE SUGGESTIONS

When choosing apples, make sure that they are firm and not mealy for a better texture when cooked. The sweetness of the apples just gets better and the addition of cinnamon makes it taste like Christmas. The pastry is simple to make and if you have enough of it and have a smaller baking dish, you can make a creative topping. Enjoy warm with a scoop of whipped cream or ice cream.

INGREDIENTS

Sweet pastry

  • 250 g cake flour
  • 200 g butter
  • 100 g icing sugar
  • 2 egg yolks
  • 1 pinch salt

Filling

  • 8 apples
  • 100 ml sugar
  • 3 tbsp cake flour
  • 1 tbsp nutmeg
  • 1 tbsp cinnamon powder
  • zest and juice of 1 lemon
  • whipped cream or ice cream

METHOD

Sweet pastry

  • Sift the flour with a pinch of salt in a mixing bowl.
  • Place the butter in an electric bowl mixer with dough hook beat until softened.
  • Add the icing sugar until light and fluffy, then add flour mixture all at once.
  • Gradually add one egg yolk until it forms a dough ball.
  • Cover the dough with plastic wrap and refrigerate for 15 – 30 minutes.
  • Brush a 20 – 23 cm baking tray with melted butter, roll out 200 g pastry on the baking tray and refrigerate the 50 g pastry.

Filling

  • Peel and core the apples and cut them into chunks.
  • Place them in a bowl add the lemon zest, lemon juice, nutmeg, cake flour and cinnamon.
  • Mix well and pour the mixture into the tart pan.
  • Take the leftover 50 g pastry and grate it over the apple tart mixture.
  • Bake the tart for 40 minutes at 200°C until golden brown.
  • Serve with whipped cream.
